South-east Asian tomato and cucumber salad
Ingredients

ripe tomatoes diced (we use truss tomatoes)
- 2
mini cucumbers, diced
- ½
spanish onion, diced
- 2
spring onions, thinly sliced
- 1
red chilli, deseeded and thinly sliced (optional)
- 2
tablespoon chopped fresh coriander
Dressing
ingredients
- 3
teaspoon fish sauce, or to taste
- 3
teaspoon freshly squeezed lime juice
- 1
teaspoon dark brown sugar
- 1
garlic clove, minced
Preparation
1. Whisk together the fish sauce, lime juice,
garlic and sugar in a large mixing bowl.
2. Add the diced tomatoes, mini cucumbers,
onion, spring onions, red chilli and coriander, and gently toss to coat.
